The year 2018 took away some of the greatest interpreters of the world culinary landscape: Gualiero Marchesi ambassador of Italian cuisine, Paul Bocouse illustrious of French cuisine and now Joël Robuchon starred chef in the world who would soon open the Atelier of Joël Rebouchon in the Design District in Miami alongside his French colleague Jean-Georges Vongerichten and Brad Kilgore, making American palates dream, including those who had already met him at home, but also in New York and Las Vegas.
The MOF (Meilleur Ouvrier de France, recognition obtained in 1976) Joël Rebouchon was born in Poitiers in 1945 and has the intuition to create the Atelier, a simple modern formula of gourmet haute cuisine accessible and happy to show itself in all its frankness, enhancing the product and putting itself at the service of creativity, technique and aesthetics of the dish, with, not surprisingly, open kitchen designed to interact with the diner. A winning and innovative formula – on the sushi bar model but interpreted in a western key without denying the history of French restaurants. Very inclined to the popularization and sharing of gastronomic art he writes and publishes many books in the name of pure and simple cooking “the hardest thing to do” as he used to say.
Among its most famous dishes, not surprisingly, the mashed potatoes – an icon of the eighties – but also many other recipes that enhance plant ingredients and healthy solutions, in favor of that healthy diet that Robuchon was among the first great to promote. Waiting to get new about the opening of its restaurant in the Design District we just have to wait for what to do.
